There’s no doubt in this world that my favourite AND yummiest meal of the day is breakfast! I literally go to bed looking forward to the next morning. I’m the type of person that loves playing around with new recipes or tweaking original ones. And yes, I’m also that person that likes to make them look good. They do say “we eat with our eyes” haha.
Lately, I’ve been trying to get more of a protein intake in. Whether that be in my smoothie, or in a meal filled with beans and quinoa or brown rice. But I realised I wasn’t having any protein in my breakfast. In winter I was having porridge. But now it’s Summer and the weather is stinking hot, I wake up wanting something cold and fresh! I opt for either a Smoothie Bowl (which I will have like, once a week) or dairy free coconut yoghurt topped with fruit and granola.
I was sitting there one morning thinking “I wander what it would taste like stirring the protein powder into the yoghurt”. So I did it, and OH MY GAWWD, it tasted insanely delish! Like I was eating a sweet, gooey batter or something. If you are anything like me and love sweet for breaky more so than savoury then you would LOVE this combo. It was super sweet and creamy. The vanilla protein powder and the coconut yoghurt go so well together. It’s honestly super simple and quick. I top it with mango always (while it’s in season) and I will either do kiwi fruit, berries or passionfruit. And I always top with granola coz who doesn’t like some crunch in their breaky bowls? This has been my go to every single morning. I’m obsessed.
- 3 heaped tbsp coconut yoghurt
- 1 scoop Tropeaka Vanilla lean protein powder
- 1 Mango
- 1 kiwi fruit or a handful of berries
